불고기 is one of Korea's oldest documented dishes, mentioned in records from the Goguryeo Kingdom (37 BC–668 AD). Bulgogi was the first Korean dish to gain mainstream recognition in the United States, appearing on American menus in the 1980s–90s.

  • 1/4 kiwi (grated) or 2 tbsp pear juice Kiwi or canned pear juice
  • 4 tablespoons Soy sauce

Instructions

    Make marinade: blend or grate 1/2 Asian pear (or 1/4 kiwi) + 4 tbsp soy sauce + 2 tbsp sugar + 1 tbsp sesame oil + 4 minced garlic cloves + 1 tsp grated ginger

    Slice beef sirloin paper-thin (freeze 30 min first for easier slicing)

    Marinate beef minimum 30 minutes, up to overnight — longer is better

    Cook in batches in a very hot pan, do not overcrowd — each piece needs to caramelize not steam

    Cook 1-2 minutes per side until edges char slightly

    Serve over rice, garnish with sesame seeds and sliced green onion
