불고기 is one of Korea's oldest documented dishes, mentioned in records from the Goguryeo Kingdom (37 BC–668 AD). The pear or kiwi in the marinade isn't optional — the fruit enzymes genuinely tenderize the meat through enzymatic action, a technique Koreans discovered centuries before food science could explain it. Bulgogi was the first Korean dish to gain mainstream recognition in the United States, appearing on American menus in the 1980s–90s.

닭갈비 was born in Chuncheon city (춘천) in the 1960s and is so synonymous with that city that 'Chuncheon' and 'dakgalbi' are basically the same word to Koreans. Chuncheon has an entire dedicated Dak Galbi Street (닭갈비 골목) where every restaurant competes for the best version. It's eaten from a communal pan in the center of the table — the shared cooking is part of the ritual.
